It was one of those typical 'very' hot summer days in Perth. The summer days when I feel like doing nothing... "what shall we have this weekend?" I popped my usual question to H . I wasn't actually 'asking'... it was an indirect request for him to take over 'the stove' for the weekend... "I don't know..." would be his response every time... ...for some inspiration ~ we'd take out a stack of cookbooks off the shelf, and start to browse...going ~ "This looks good..." "Oh! this looks yummy...." or  "It is been a while since we ate this..." So that particular early February weekend, we had a craving for?.... wonton noodles . Though it was a lengthy and tedious preparation...in Chinese ...

Recipe Ingredients : Yellow Vermicelli: 300-400g dried vermicelli 2 tsp turmeric powder Beef broth : 1 kg shin boneless/gravy beef (or 500g shine boneless/gravy beef and 1 kg chuck bones) 1 cinnamon stick 2 star anise 6 cloves 25g of ginger, bruised 150g shallots, blended 15g garlic cloves, blended pinch of salt Sambal (chilli paste): 2 tbsp chilli powder 5 tbsp of cooking oil 2 garlic cloves, peeled and chopped 3 tsp brown sugar 3-4 tbsp tamarind paste pinch of salt Garnishes: 2 spring onions, chopped some coriander leaves, chopped some pickled radish Directions: 1. I am so not looking forward to summer..   We were under Perth HOT spells for 3 consecutive days and it is only SPRING... This HOT weather is really wearing me down, zapping my energy and my head will make a 360 °  spin... I prepared this Thai Glass Noodle Salad for our Friday BBQ ( before the weather turned us to human jerky ... ). Thai Glass Noodle Salad  is easy on the stomach, it is refreshing with freshly chopped herbs and crunchy vegetables...  I am whipping up this salad again this Saturday...
