Crispy Smashed Potatoes

Smashed potatoes with rosemary garlicky taste are crispy on the outside and irresistibly soft fluffy on the inside.
Apart from french fries, roast potatoes and mashed potatoes, potato cakes was something new to me.
I watched Iain 'Huey' Hewitson cooking show, back in 2009. It was known as potato cakes.
I even blogged about these beautiful potato cakes in one of my blog posts.
Since then, this potato cakes has become my family favourite, every time we have a bbq get together.
Fast forward a decade, these potatoes were back on the food blogging scene, now being introduced as smashed potatoes!
I prefer to have my smashed potatoes seasoned with just olive oil and salt.
My daughter prefers them with rosemary, salt and garlic.
I find that garlic has burnt after taste (especially if fresh garlic is used)
Rosemary sprigs
Garlic powder or use fresh garlic.
Add olive oil.
Royal blue potatoes
Fill up water to cover potatoes.
Pierce potatoes (optional)
Add salt
Boil potatoes for 10 minutes.
Place pan in the oven when pre-heating.
Brush with olive oil.
Place potato on the pan.
Note: you can use baking tray if you are baking large quantity!
Press down the potatoes.
This should be easy as potatoes are soft.
Drizzle with more olive oil and seasoned with rosemary garlic oil (we prepared earlier)
Fresh out of the oven.
My favourite potato to use to make smashed potatoes is Royal Blue.
Royal blue potatoes are creamy and fluffy with crisp skin with every roast.
I tried using 'Nadine' or white potato but they were not as good as Royal blue.
Yes, you can definitely makes these on stove top.
Definitely worth trying on bbq.

How to make smashed potatoes?
1. Prepare rosemary, garlic and olive oil seasoning
Rosemary sprigs
Garlic powder or use fresh garlic.
Add olive oil.
2. Cook potatoes or par boil potatoes
Royal blue potatoes
Fill up water to cover potatoes.
Pierce potatoes (optional)
Add salt

Brush with olive oil.
4. Flatten or smash the cooked potatoes
Place potato on the pan.
