Why must we use Pasteurized eggs!

If you are using raw eggs in your cooking, is it best to use pasteurized eggs.

Raw eggs as we all know, may have some food borne illnesses, salmonella is the most common in uncooked eggs.

I love soft boiled eggs or runny egg yolks (drizzle some sweet soy sauce and a dash of white pepper) on my food. 
Using pasteurized eggs will eliminate the chances of me getting food poisoning.


Where to buy pasteurized eggs?

I have seen cartons of pasteurized egg whites sold in supermarket but yet to find pasteurized whole eggs!
(Let me know if you come across some in the grocery stores in Australia and Perth to be specific)

Hence what do we do if we can not find pasteurized eggs?

In few steps, very simple steps, you can make pasteurized eggs anytime!

How to Pasteurize Eggs?

Easy steps as follows:
 
Use eggs at room temperature.
Wash off any dirt.
Place eggs in pot filled with tap water.
Bring the water to 60 C or 140F
Leave the egg at that temperature for 3 minutes (for medium size eggs)
After 3 minutes, quickly remove from 60c water bath to cold bath.
 Place eggs in pot fill with water
 Bring water to 60C
 Immediately transfer to cold bath

How To Store Pasteurized Eggs?

Keep them whole and refrigerate.

Pasteurized eggs are best used within 7 days.

  • 1 egg (or many)

Instructions

  1. Wash and fill up pot with tap water
  2. Place egg gently in pot
  3. Bring the water to 60deg Celcius (140F).
  4. Maintain the temperature for 3 minutes for medium size eggs or 4 or 5 minutes for bigger eggs.
  5. If the temperature starting to rise, add cold water a little at time.
  6. Immediately transfer to cold bath to stop cooking the egg.
