Spaghetti Squash and Napoletana Sauce

The best way and easy way to cook spaghetti squash! No fuss with the exception of cutting the spaghetti squash into two halves.

Spaghetti Squash

Spaghetti squash also known as vegetable spaghetti, noodle squash or mandarin squash.

Spaghetti squash belongs to pumpkin family, a unique winter vegetable.

It is bright yellow, oblong in shape and quite firm to touch.

But once cooked, fluff up the flesh or pulp with fork, and you will get stringy flesh that resemble spaghetti.

Spaghetti squash has all the good stuff in it like, vitamin A, folate, folic acid, beta-carotene, and potassium, and an excellent source of fiber.



How does spaghetti squash taste like?

Some say it has mild taste, but to me, it has no taste hence it is good to pair up spaghetti squash with a simple tomato based sauce.

How to cook Spaghetti squash?

I prefer to roast spaghetti squash.

The only difficult part is to halved spaghetti squash.
You may need a little bit of strength on to do this task.

We shall start by preparing spaghetti squash for roasting.

What sauce is best to go with spaghetti squash?

I love an easy and simple sauce to serve my spaghetti squash, hence my go to sauce is the Napoletana sauce.

You can opt for bolognese but simple is always best (in my humble opinion).

How to cook Napoletana sauce?

Napoletana sauce - Chopped onion
1. Chopped onion

Napoletana sauce - Chopped garlic
2. Chopped garlic

Napoletana sauce - Chopped tomatoes
3. Diced tomatoes

Napoletana sauce - basil leaves
4. Basil

Add olive oil in a pan

Add tomatoes

Add basil
8. Add basil

Season napoletana sauce with salt and pepper
9. Season with salt and pepper

Simmer until sauce has reduced
