Spaghetti Squash and Napoletana Sauce

The best way and easy way to cook spaghetti squash!
No fuss with the exception of cutting the spaghetti squash into two halves.

Spaghetti squash belongs to pumpkin family, a unique winter vegetable.
It is bright yellow, oblong in shape and quite firm to touch.
But once cooked, fluff up the flesh or pulp with fork, and you will get stringy flesh that resemble spaghetti.
Spaghetti squash has all the good stuff in it like, vitamin A, folate, folic acid, beta-carotene, and potassium, and an excellent source of fiber.
The only difficult part is to halved spaghetti squash.
You may need a little bit of strength on to do this task.

We shall start by preparing spaghetti squash for roasting.

1. spaghetti squash

2. Cut spaghetti squash into 2 lengthwise.
Noticed that I place anti slip mat underneath spaghetti squash!

3. Remove pulp and seeds

4. Pierce the skin

5. Olive oil

6. Brush with olive oil

7. Season with salt and pepper

8. Place on baking tray

9. Roast spaghetti squash

10. Fluff / scrape with fork.

Spaghetti squash is ready to be consumed.
You can opt for bolognese but simple is always best (in my humble opinion).

1. Chopped onion

2. Chopped garlic

3. Diced tomatoes

4. Basil

5. Add olive oil in a pan

6. Add chopped garlic and onion

7. Add tomatoes

8. Add basil

9. Season with salt and pepper

10. Simmer until sauce has reduced

Napoletana sauce is ready

and so is spaghetti squash.

I could eat this spaghetti squash without any worries.

What sauce is best to go with spaghetti squash?
I love an easy and simple sauce to serve my spaghetti squash, hence my go to sauce is the Napoletana sauce.You can opt for bolognese but simple is always best (in my humble opinion).
