Sticky Strawberry Fried Chicken Wings

Sticky strawberry fried chicken wings are easy to make and always a crowd pleaser!
These double fried chicken wings are juicy and succulent serve with sticky strawberry sauce, perfect as party finger food.

I must say, this is not a common combination.

We know of Lemon Chicken, Korean Fried Chicken, but strawberry and fried chicken? 
I was like you, very sceptical at first.

I had my first sticky strawberry fried chicken wings when my daughter and I were in London in 2018.

It was more of strawberry glaze chicken wings. 
So I thought of re-create similar but with real strawberries to coat the succulent twice fried chicken wings.

How to make sticky  Strawberry sauce for Chicken Wings?

This strawberry sauce can be prepared a day or two ahead of time.
Keep them refrigerated in an airtight container.

1. Wash and cut strawberries into pieces.
Leave the strawberries to macerate in sugar for at least 15 minutes

2. Next get all the spices ready.

3. Pour strawberry puree into a pot.

 
 Add spices to strawberry sauce

4. Add cayenne pepper, salt, garlic powder, sweet paprika

 
 Add honey to strawberry sauce

5. Add honey

 cook until strawberry sauce reaches 104C

6. Cook on low heat until strawberry mixture reaches 104C or until sauce thicken.

7. This step is optional, you can either strain the strawberry sauce to have a nice shiny glaze when coating the chicken or coat the deep fried chicken wings with whole strawberry sauce (un-strained)

How to Fry Chicken Wings?

1. Wash, separate wings from drumette.
Then pat those chicken wing dry with kitchen paper.
Add salt and pepper.

 coat chicken wings with mixture of tapioca flour and corn flour

2. Add tapioca flour, cornflour, salt and pepper in a bag.

Then add chicken wings. Make sure to clip the bag so the flour mixture will not spew.

Shake the bag until the chicken wings are fully coated with flour.

3.Shake off excess flour.

  Deep fry chicken wings

4.Heat up oil in a wok.
Fry the chicken wings batches by batches, until pale golden brown in colour.
Scoop the chicken with slotted spoon.

5. Fry the chicken pieces for the second time, to get that crisps and juicy bites.

How to make strawberry chicken wings?

Mix the strawberry sauce with deep fried chicken wings and serve immediately.

How long can I keep these fried chicken wings for?

These fried chicken wings are best eaten on the day.

However, sometimes fried chicken can be a bit too much, you must refrigerate the leftover in an air tight container or place in a glass container and cover with cling plastic wrap.

Take the chicken wings out of the refrigerator at least an hour before consuming.

You may warm these chicken wings in a microwave.
