Are you a "Football or Soccer" Crazy?
I AM :D
... a big fan of World Cup.... not into league or Clubs ... just World Cup.
I have another football crazy person to join the fun of ooohhing... aaahhing and screaming at the tv screen :D.
Naturally... when we are awake at that godly hour, our tummy too will demand some attention.
Due to time zone, we get to watch the matches either at midnight, 3am or 6am, and soon it'll be at 4am... when everyone else (not a footbal fan of course ;p) is in bed dreaming away...
...and these Thai Lemongrass little bites are excellent for wee hours football matches!
Prepare them ahead of time...
you will definitely get a good bite for a good fight (on the football field.. I mean :))

Thai Lemongrass Little Bites
Adapted from Ms Donna Hay
Serve 8
2 kg chicken wings
1/2 cup lemongrass - chopped
1/4 cup kicap manis
2/3 cup raw sugar
1/4 cup plus 2 tablespoon fish sauce
1 tablespoon lemon juice
2 teaspoon chilli flakes
- Clean and cut into drummettes and wingettes.
- Blend lemongrass, kichap manis and fish sauce in a blender until smooth.
- Mix chicken pieces with lemongrass mix, raw sugar, lemon juice and chilli flakes
- Marinate overnight in the refrigerator.
Next day:
- Take out the chicken at least 3-4 hours prior to baking (to room temperature).
- Pre heat oven to 200C.
- Arrange chicken pieces on the roasting rack (with roasting pan underneath to catch the juice).
- Roast for 40-50 minutes until chicken pieces is cook.
- Serve immediately
I'm not a football fan... Lot better for sleeping.. Lol. Although it's here at normal hours so that helps... But these bites will go well at any party!

DeleteThe wings must be flavourful and full of aroma of the lemongrass.so easy to prepare and hassle free too. Im not much into the world cup but do catch up on their scores.

DeleteI don't really follow soccer (football) at all, but every four years I get addicted to the World Cup. It's so dramatic!
