Perfectly poached eggs are delicious with mashed avocado on toast.

Eggs are staple in my kitchen.I love to have my scrambled eggs (minus milk) on weekends.
To have soft boiled egg with a dash of white pepper and sweet soya sauce (kechap manis), is another favourite since young.
Omelette is another easy (read lazy) side dish for mid week dinner.

Not so often.
What is Poach Egg?
Fresh eggs are drop into hot, low simmering, mildly acidic water for few minutes. Poached eggs are little morsels of egg whites firm up and enclosed around the oozy, yellow golden yolk, forming a little egg package.How to Make Poached Eggs?

1. Crack fresh egg into tea strainer, to drain off the egg white 'water-y' bits.
Poach egg will not look pretty with this excess water.
2. Bring water to quick boil then lower heat to a gentle simmer (only few tiny bubbles at the base)
Add vinegar and stir.
3. Drop the egg in the middle. Leave for 3 minutes (set your timer for this)
Scoop with slotted spoon (or tea strainer)
Serve.
Can I use Lemon juice instead of vinegar?
Absolutely.Lemon and vinegar are acidic, hence it help the egg white coagulate and form that firm white egg enclosed the yolk.
Will there be sour after taste?
The amount of either vinegar or lemon used is so little, compared to 4 cups (at least) of water, to leave a sour after taste.Short answer : NO
How long to cook the egg for?
I used egg at room temperature.Took me 3 minutes to get that nice runny creamy poached egg.
How do you serve poached eggs?
There many ways to enjoy poached egg, and one of them is to serve poached egg on toast with mashed avocado.You can also serve poached eggs with asparagus and drizzle some hollandaise sauce.
