Baked greek style chicken with potatoes

One pot meal has always been a favorite of mine. This Greek-style flavorful chicken is easy to prepare and the best part is; that it is easy to clean, and less washed up utensils after!

Then this baked Greek chicken is one for you.

One-pot meals or one-tray meals like coriander chicken, chorizo, and rice, are some of my favorite ways to prepare meals for my entire family, especially on busy days.


The Best Greek Chicken Marinade

Nothing can go wrong with a Greek marinade of lemon, olive oil,, and rosemary as the main ingredients.

Flavors of Mediterranean in one baking dish hit all the right notes.

And the potatoes melt in the mouth, so to speak :D.

You can either use chicken drumsticks,, or wings for this recipe, but I opt for chicken maryland.
I would avoid using chicken breast as the meat tends to dry out if we are to cook for a long period of time.

How to prepare Greek chicken?

Simple ingredients and methods are listed in the recipe card below


Step 1: Chicken

Clean chicken pieces thoroughly and place chicken in a large bowl.


Step 2: Marinade ingredients

Add 1/2 cup of lemon juice olive oil, lemon and chicken pieces

Add 1/2 cup of olive oil Rosemary, herbs, olive oil, lemon and chicken pieces

Add rosemary and oregano  Garlic, Rosemary, herbs, olive oil, lemon and chicken pieces

Add minced garlic  Cayenne pepper, Garlic, Rosemary, herbs, olive oil, lemon and chicken pieces

Add salt and cayenne pepper

Step 3: Mix and Marinate chicken

Add cut up potatoes to greek chicken

Mix and rub the spices and ingredients above onto the chicken maryland and cut up potatoes.

You can leave the marinated chicken in the mixing bowl and transfer them to a zip-lock bag or an airtight container.
Refrigerate overnight.


Step 4: Time to bake marinated chicken

Transfer chicken pieces, potatoes, and excess marinade to a heat-proof container, like a large skillet or baking tray.
Baked according to the instructions below.
Cook time and oven temperature can be found in the recipe card below.


An additional step here is to take out chicken pieces halfway through and continue to bake potatoes for another 10 to 15 minutes to brown the top.
Alternatively, place under a broiler or hot grill for a few minutes to brown potatoes and chicken pieces.

Step 5: Baked to golden perfection!!!

How long should I marinate the chicken?


Do note that you can either marinate a few hours before cooking (suggestion: 4 hours minimum) or overnight.
I highly recommend marinating overnight for the flavor to develop.

This simple chicken marinade of lemon, olive oil, and herbs overnight will give the chicken extra flavor, especially the potatoes.

What to serve with Greek Chicken?


It is almost a complete meal, with potatoes added to the pan.
We have protein and carbs!
The only thing to add to a complete meal is some steamed or roast vegetables.


Garlic and Parmesan roasted broccoli would be nice to add to complete this meal.
Add red onion, cherry tomatoes, and kalamata olives or feta cheese to the side dish.

Otherwise, another suggestion is to steam any vegetables!

What is chicken maryland?

In Australia, chicken maryland refers to a chicken cut known as whole-leg chicken (the drumsticks and skin-on thigh).

Can I use boneless chicken thighs or boneless chicken breasts?

I would try not to use boneless chicken breast as that part of chicken meat is not suitable for long cooking.
The meat will tend to be dry and mushy.

I would much prefer to use chicken thigh with bone instead of boneless chicken thigh.
Cooking chicken with bones tends to be more flavorful and keeps the juice in.

Can I prepare this chicken a day before?

It is best to marinate the chicken overnight for the flavor to develop.

How do I keep any leftovers?

Always keep any leftover cooked chicken in an airtight container and place it in the refrigerator.

How long can I keep leftovers?

Consume within 3 days and make sure to reheat the food before consuming the next day.

    So should it be 425/220, or 375/190?

Hi busted wanted to say thanks for your recipe, I hadn’t considered or come across idea of taking out the chicken 10 mins prior to allow crisping the potatoes, normally I cooked the protein separate in the oven but trying expand my skills. I had already bought some pre-marinated herb and garlic chicken Maryland’s for tonight, boiled the potatoes a little before sticking everything together in one pan. I will definitely give your recipe marinade a go next time. We have been using a pressure cooker a lot recently to cook mainly rice with different proteins added straight on top and the enhanced flavour of cooking together inspired me to try it out. My partner was getting a bit tired of pressure cooked meals haha. I’m using a bunch of my home grown rosemary and a couple pineapple sage stalks in oil to baste the chicken and the marylands to help develop flavours more. Will let you know next time how this goes, along with your recipe.

  4. Hi Lisa thanks for the recipe I'm trying it tonight. My only query is the amount of salt. It says to use a tablespoon of salt which seems to be a lot. Just wondering.

      It seems a lot but it will flavour the chicken better (brining).
      You can reduce the amount at the marinating stage and adjust the salt level later.
