Back to my food story :P
It was more than 9 years ago, I came across Fruit Pastry Cake on the net.
Every blogger would have at least baked once and raved about this fruit pastry cake.
I tried looking up on the web, to find out more on fruit pastry cake, or at least why is it named Fruit pastry cake, but my search was futile!!
Hence I give a miss!
Fast forward 9 years on, fruit pastry cake make a comeback!
I still could not find why it has been named that, but this time round, and not wanting to wait another decade, I decided to give this fruit pastry cake a chance.
What fruits are suitable for Fruit pastry cake?
Any fruits actually!!Many recipes mixed canned fruits like peaches, with some fresh fruits like strawberries.
I chose seasonal fruits to top my fruit pastry cake.
And of course I just have to choose mangoes (my favourite fruit :D ) and blueberries.
hence my fruit pastry cake became Mango and Blueberries Cake!
How to Bake Mango and Blueberries Cake
Its easy and fuss free to bake Mango and Blueberries Cake .Ingredients and detailed steps are in the printable recipe card below.

1. Mix Mango and blueberries in a bowl
2. Add sugar and set aside
3. Cream butter, sugar and yogurt
4. Add eggs
5. Add flour (see recipe below for the flours used in this Mango and Blueberries Cake.
6. Add orange zest and elderflower cordial.
We love our elder fower cordial :)
7. Pour into 20cm | 8 inch baking pan
8. Top with your favourite fruits
9. Baked to perfection :D
The aroma of caramelising mango pieces wafting through the oven door, was making me giddy with joy.
I could not wait until I could have a slice.
But I have to let my Mango and Blueberries Cake cool down a bit, before I could eat them!

Immediately!!! :P
Seriously, Mango and Blueberries Cake is best eaten once the cake has cooled down.
But if you have left over Mango and Blueberries Cake, it is best to keep in an air tight container and stack them in refrigerator.
But do not keep them more than 5 days in the refrigerator.
I used big chunky mangoes, and mangoes has lots of 'moisture / water/ juice' in them and they tend to sweat out a bit.
This 'sweating' process will make the cake slightly on the soggy side.
No one likes soggy cake after all, right? :P

Mango and Blueberries Cake

This easy mango and blueberries cake is delicious, fragrant, baked with fresh summer fruits.
ingredients:
- 340g fresh mango (cubed)
- 160g blueberries
- 100g unsalted butter at room temperature
- 160g caster sugar
- 50g greek yoghurt
- 3 eggs (approximate weight 150g)
- 1 teaspoon elderflower cordial
- 190g plain flour
- 20g corn flour
- 1 teaspoon baking powder
- 1 teaspoon of orange zest
instructions:
How to cook Mango and Blueberries Cake
- Pre heat oven to 160 C (fan forced)
- Line 20cm round baking pan with greaseproof paper
- Mix cubed mangoes and blueberries with 1 tablespoon sugar.
- Set aside.
- Sieve plain flour, corn flour and baking powder into a mixing bowl
- In another bowl, cream butter, sugar and yoghurt
- Add egg one at a time
- Add elderflower and orange zest to the batter
- Mix flour into the wet mixture
- Mix thoroughly.
- Pour onto pre-prepared baking pan.
- Top with cubed mangoes and blueberries
- Bake for 50-55 minutes ot until skewer comes off clean.
- Dust with icing sugar before serving
