2018 was my "Lemon" year :D

Lets recall my 2018 lemon posts...

Lemons is not only for baking...

Lemon is one of my favourite fruits. Not that I can eat lemon, on its own, just like that.
  • A slice of lemon in my drinking glass, cleanse my palate and keep me fresh all the time, especially on hot summer days.
  • A squeeze of lemon in simple salad brings out the flavour in sometime bland greens.
  • A zest and a drizzle of lemon in bakes, makes the whole house smells like heaven on earth.
  • Rub your hands with lemon to get rid of odour, eg fishy smells.
  • Lemons are used in homemade, "au-naturel" beauty product.


With my bounty lemon harvest for 2018, I made this lips-smacking delicious Lemon Curd Slice.

Making Lemon Curd Slice

Ben O' Donoghue's Lemon Curd Slice, has shortbread like base, top with Lemon Curd, and top with crumble mixture.

Just imagine biting into these luscious Lemon Curd Slice, what every bite does to your palate!!

You are biting into sweet buttery shortbread base, then pop in some tart, sweet and 'sour-ish' taste of lemon curd, and then comes... the crunchy bits of almond meal and flour crumble.

Isn't it just like the New Year fireworks celebrations, taste and popping sensation in your mouth :P

Tips :

Sharing one tip on how to keep lemon 'shelf life' longer in the fridge...

When you harvest the lemons, makes sure that you cut about 1 cm of stalk as well. Do not wash, and straight away place them in the vegetable compartment in your fridge. 

Lemon Curd Slice

A delicious lemon curd slice. Lemon curd slices baked with a shortbread base topped with lemon curd.

Ingredients

Lemon curd slice base
  • 250 g / 8.8 oz plain flour
  • 75g / 2.6 oz icing sugar
  • 180g / 6.4 oz chilled butter
  • 1 egg yolk
  • 2 tablespoon cold milk
  • 500g / 17.6 oz lemon curd
Crumble top
  • 50g / 1.8 oz plain flour
  • 60g / 2.2 oz almond meal
  • 35g / 1.2 oz caster sugar
  • 50g / 1.8 oz chilled butter

Instructions

Lemon curd base
  1. Sift flour and icing sugar into large mixing bowl.
  2. Whisk to combine
  3. Rub in butter to resemble bread crumbs
  4. Add yolk and milk
  5. Knead until the ingredients comes together into a ball
  6. Line baking pan with greaseproof paper and roll the dough to fit into a 20cm by 20 cm pan
  7. Chill for 30 minutes.
  8. Pre heat the oven to 180C
  9. Prick the base with fork
  10. Bake for 25 minutes and leave it to cool.
  11. Second stage after the base has cooled completely, spread lemon curd
  12. Top with crumble mixture (see section below)
  13. Bake for another 25-30 minutes.
  14. Cool completely in the pan
  15. Dust with icing sugar before serving
Crumble top
  1. Add almond meal, flour, sugar and butter in a mixing bowl
  2. Rub together with your fingertips until the mixture resembles coarse crumbs
  3. Stir in yolk and set aside in the fridge until required.
