Lemon Curd Slice

A delicious with shortbread base topped with lemon curd.
This Lemon Curd Slice, has a shortbread base, top with Lemon Curd, and top with crumble mixture.
Just imagine biting into these luscious Lemon Curd slices, what every bite does to your palate!
You are biting into sweet buttery shortbread base, then pop in some tart, sweet and 'sour-ish' taste of lemon curd, and then comes the crunchy bits of almond meal and flour crumble.
Incredible taste, popping sensation in your mouth :P
Mix flour, sugar and butter
to 'breadcrumb texture'
Add egg yolk and milk
Mix to form a dough.
Spread the dough onto an 8-inch by 8-inch baking pan lined with greaseproof paper.
I am being meticulous and I want to have a nice square and smooth surface!
You can skip this stage if you like.
Use a fork to pierce the base.
Refrigerate for 30 minutes
After 30 minutes, the base is ready to be par-baked.
Par-bake the base and leave it completely cool before topping it with lemon curd.
Mix flour and almond meal
Add sugar
and butter.
Mix to breadcrumb-like texture.
Add egg yolk and lightly mix.
Refrigerate until ready to use.
Add lemon curd.
Spread lemon curd evenly.
Top with streusel.
Ready to go into the oven.
Cut when lemon curd slice has completely cooled down.
The maximum number of days is 7, as long as lemon curd is kept in the refrigerator.

3) When I had abundance of lemons, I made some Preserved Lemons
Preserved lemons are good with Middle Eastern dishes or steamed fish using some preserved lemon slices.
4) Some lemons were sacrificed to make the luscious Homemade Lemon Curd that I used to make this Lemon Curd Slice
5) Last but not least, I used lemon to clean kettles.
Lemon makes an excellent cleaning 'agent'.
And its chemical free!!!
When you harvest the lemons, makes sure that you cut about 1 cm of stalk as well. Do not wash, and straight away place them in the vegetable compartment in your fridge.

How to Bake Lemon Curd Slice?
1) Prepare lemon curd.
You can prepare lemon curd a few days ahead.2) Prepare shortcrust base

Always keep lemon curd slices in an air-tight container and in the refrigerator.How long can I keep the lemon curd slice?
Lemon curd slice is best eaten within 3 days.The maximum number of days is 7, as long as lemon curd is kept in the refrigerator.
Lemons are not only for baking
Lemon is one of my favourite fruits. Not that I can eat lemon, on its own, just like that.- A slice of lemon in my drinking glass, cleanse my palate and keep me fresh all the time, especially on hot summer days.
- A squeeze of lemon in a simple salad brings out the flavour in sometimes bland greens.
- A zest and a drizzle of lemon in bakes, make the whole house smells like heaven on earth.
- Rub your hands with lemon to get rid of odour, eg fishy smells.
- Lemons are used in homemade, "au-naturel" beauty products.

Tips when harvesting lemons
Sharing one tip on how to keep lemon 'shelf life' longer in the fridge...When you harvest the lemons, makes sure that you cut about 1 cm of stalk as well. Do not wash, and straight away place them in the vegetable compartment in your fridge.

I agree with you, lemons are the best, in fact, I simply never run out of lemons in the fridge, I would get nervous. Use them A LOT.
