Simple egg sandwich recipe! Classic egg sandwich that is easy to make and excellent for quick lunches.

Everyone has their version and different ways of an egg sandwich.

Some like to have omelets sandwiched between bread slices and some may prefer to have sliced boiled eggs or even scrambled eggs with a slice of cheese.
The varieties of egg sandwiches are limitless.

I prefer to use hard-boiled eggs for my sandwiches.
And according to my daughter, I made the best egg sandwich ever!

I have been making egg sandwiches for their school lunch box ever since they started primary school.

How to make an egg sandwich?

The key ingredient in making egg sandwiches is of course hard-boiled eggs, followed by mayonnaise and slices of bread.
Salt and freshly ground black pepper are added to the egg mixture.

Hard boiled eggs

1) Eggs

Hard boiled eggs are much preferred than soft boiled eggs!

Wash eggs and place the eggs in a pan.
Fill up with water and start cooking on medium heat.

Must egg be at room temperature?

Not necessary.

I usually use eggs straight from the fridge, wash them, place the eggs in a pot of water, and boil them on medium heat.
Let the eggs boil for at least 2 minutes, turn off the heat, and leave the eggs in the hot water for another 6 minutes (or 7 minutes depending on the egg size)

Transfer the eggs to a cold water bath.
Leave the eggs to cool in the bath.

2) Bread

The best part is, that you can use any kind of bread or rolls works very well with this recipe.

For this post, I used slices of white bread and dark rye bread.

3) Mayonnaise.

Mayonnaise is a must to make creamy eggs mixture.
If you have time you can make your own mayonnaise, but in less time then use store-bought mayonnaise.

Can I use kewpie mayonnaise (Japanese mayonnaise)?

Japanese egg sandwiches or tamago sando use kewpie mayonnaise.
I did try to use kewpie but it was not to our taste buds.

I used parsley instead of green onion.

5) Butter

This is optional!
I prefer to butter my bread for that rich taste and extra creamy egg mixture.

Divide egg mayo mixture
Divide the egg mayo mixture and spread on onto the bread.

Cut sandwiches
Cut the egg sandwiches into small pieces to fit in the lunch box or as elegant finger sandwiches for entertaining guests.

Yes, you can prepare the egg and mayo mixture, a day before and leave it in the refrigerator.

b) Can I use soft boiled eggs for my sandwiches?

I much prefer hard boiled eggs to soft boiled eggs.
Soft boiled eggs will make the mixture slightly 'runny' and eventually will make the bread soggy.

A soggy egg sandwich is not very nice to eat.

c) Can I use an English muffin?

Ooh, I love the idea of an egg sandwich using English muffins.

d) How long can I keep the sandwich for?

This egg sandwich is best eaten on the day it is made.

If it is for the lunch box, then place the sandwich in an airtight container and keep it refrigerated.
