Simple egg sandwich recipe!
Classic egg sandwich that is easy to make and excellent for quick lunches.
This is one sandwich that needs no introduction whatsoever!
Everyone has their version and different ways of an egg sandwich.
Some like to have omelets sandwiched between bread slices and some may prefer to have sliced boiled eggs or even scrambled eggs with a slice of cheese.
The varieties of egg sandwiches are limitless.
I prefer to use hard-boiled eggs for my sandwiches.
And according to my daughter, I made the best egg sandwich ever!
I have been making egg sandwiches for their school lunch box ever since they started primary school.
Salt and freshly ground black pepper are added to the egg mixture.

Wash eggs and place the eggs in a pan.
Fill up with water and start cooking on medium heat.
I usually use eggs straight from the fridge, wash them, place the eggs in a pot of water, and boil them on medium heat.
Let the eggs boil for at least 2 minutes, turn off the heat, and leave the eggs in the hot water for another 6 minutes (or 7 minutes depending on the egg size)
Transfer the eggs to a cold water bath.

If you have time you can make your own mayonnaise, but in less time then use store-bought mayonnaise.
I did try to use kewpie but it was not to our taste buds.
I prefer to butter my bread for that rich taste and extra creamy egg mixture.
Divide the egg mayo mixture and spread on onto the bread.
Cut the egg sandwiches into small pieces to fit in the lunch box or as elegant finger sandwiches for entertaining guests.
