What can I do with Sourdough Discard?

My sourdough starter (aka Fred Friday) took almost 8 days to mature. 

I used King Arthur's Sourdough starter recipe.
Feeding twice daily, from day 0 to day 8,  my starter has used up almost 2 kg of flour!

There are many wonderful ways to make full use of the discards, from waffles to pizza.
But turning them into golden brown crackly crackers is my top favourite. 

In few easy steps, you will have your crackers ready for snack.

How To Bake Sourdough Crackers?

A quick glimpse with photos on how to bake sourdough crackers.

1. Mix all dry ingredients in a mixing bowl.
Then add sourdough discard

2. Add olive oil and mix using mixer (or by hand)

3. Rest the dough for 30 minutes

4. Divide into 8 and run through pasta maker.

I used Kenwood and my last setting is at number 7.

If you don't have pasta roller, just roll to the thickness that you require. 

You may need to adjust the baking time too. divide sourdough

Homemade rosemary sourdough crackers with sea salt are perfect snack to enjoy on its own or with any dip or hummus.

Ingredients

  • 120g Plain Flour 
  • 10g chopped rosemary 
  • 3 tablespoon olive oil (extra for brushing) 
  • 200g sourdough discard 
  • 1 teaspoon icing sugar 
  • 1/2 teaspoon salt (extra for sprinkling)

Instructions

  1. Pre-heat oven to 170C
  2. Mix dry ingredients ; plain flour, chopped rosemary, icing sugar and salt in a mixing bowl.
  3. Add sourdough discards
  4. Add olive oil.
  5. Using Kenwood mixer (or by using hand) mix to combine into a dough.
  6. Wrap and let the dough rest for 30 minutes.
  7. Divide into 8 
  8. Flatten into disc.
  9. Using a pasta roller to my Kenwood, using no 7, and roll to a thin strips.
  10. Place on baking tray lined with greaseproof paper.
  11. Brush with olive oil and sprinkle some sea salt.
  12. Bake at 170c for 12-15 minutes until gold and crisp.
  13. Leave the sourdough crackers, to cool on cooling rack.
  14. Store in an air tight container.
