Homemade Broccoli Cheese Soup is the ultimate comfort food!

Winter will soon be over for us in the southern hemisphere.

It has been a cold, rainy winter in Perth. A bowl of hot steaming soup in hand, makes an excellent comfort food during winter.

And this creamy Broccoli and Cheese Soup is the perfect choice!

How to Cook Broccoli and Cheese Soup?

Melt butter in pot
Step 1 : melt butter

Saute garlic in butter
Step 2: add chopped butter
Add flour to butter and garlic Step 3: Add plain flour
Add broccoli and grated carrots
Step 4 : Add vegetable or chicken stock or water with 1 teaspoon of chicken stock granules.
Add sharp cheese to the broccoli soup
Step 5: last step is to add 2 types of sharp and mature cheeses.

How to stop cheese from splitting or curdling?

Make sure to add cheeses at the end after you turned off the heat.
Keep on stirring the soup constantly until cheese melted.

Best cheese to use for this Broccoli and Cheese Soup?

I much prefer sharp matured cheeses.

That is why I chose parmesan and Red Leicester cheese.

But if you are not for strong, bold taste, substitute with milder cheese like cheddar.

What is best to go with Broccoli and Cheese Soup?

You can have this mouthwatering bowl of broccoli and cheese soup on its own as a starter.

I love to have my soup with a slice or two crusty sourdough bread (my post on sourdough will be coming soon. It is in the 'Test and Taste' period.

How long can I keep my Cheesy Broccoli soup for?

Have some left over soup?

No worries, just keep them in an air tight container and refrigerate.

The soup can be kept for max 3 days.

Can I re-heat the soup in microwave?

Yes.

Just follow your microwave oven manufacturer's manual on re-heating set and time.

Easy Broccoli Cheese Soup

Creamy comforting soup with tender broccoli pieces, grated carrots and sharp mature cheeses. So much flavours!

Ingredients:

  • 4 cups | 350g broccoli 
  • 2 medium size | 180g carrots 
  • 2 | 10 g garlic - chopped
  • 1/4 cup flour 
  • 3 1/2 tablespoon | 50g butter 
  • 2 cups water 
  • 1 teaspoon chicken stock granules (optional) 
  • 1 cup heavy cream 
  • 1 cup milk 
  • 1/2 cup parmesan 
  • 1 cup Red Leicester cheese 
  • 1/4 teaspoon nutmeg 
  • salt and pepper

Instructions:

  1. Melt butter in a medium size pot.
  2. Add chopped garlic.
  3. Sauté until garlic turn slightly golden in colour
  4. Add flour and stir until flour is bubbly and cook through
  5. Add stock (or water with 1 teaspoon chicken stock granules)
  6. Bring to a quick boil.
  7. Add carrots, broccoli, cream and milk.
  8. Add nutmeg.
  9. Season with salt and pepper.
  10. Bring to a quick boil.
  11. Turn off the heat and add cheeses
  12. Stir until both cheeses melt and adjust the taste.
  13. Serve with crusty bread.
