Here comes Blondie :P... Peanut butter and strawberry jam blondie ;P
The only Blondie, I had known during my growing up...  ‘My growing old’ years.. is Blondie in the form of Debbie Harry :D
I can almost hear her singing in her husky voice...
”the tide is high but I'm holding on... I’m gonna be your number ONE.... number ONE“ 
with that ultra sci-fi very retro-ish kind of weird video!!!

...and that’s that of Blondie Debbie Harry until I get to know Blondie of the eating kind ;P.

When I announced...’hey I am making some blondies today...”, their faces expression said it all...
What Blondie? What is mom taking about? 

For those in the same boat as I was...blondie is brownie minus chocolate ;P hahaha.



Salted Peanut Butter and Jam Blondies

Peanut Butter and Strawberry Jam Blondies


120g butter - melt
175g plain flour
1 teaspoon baking powder
1 teaspoon pink Himalayan salt (extra for sprinkle)
2 large eggs
250g raw sugar (I used 150g, I find 250g is too sweet)
150g chunky peanut butter
1 drop vanilla bean paste
2 tablespoon strawberry jam

Butterscotch Roasted peanuts*
50g peanuts
2 tablespoon butterscotch syrup

Prepare Butterscotch Roasted peanuts
  1. Pre heat oven to 180C. 
  2. Mix peanuts and syrup. 
  3. Place on baking tray lined with greaseproof paper. 
  4. Bake for 9 mins
Keep one eye on the oven!!! It may turned out Burnt Butterscotch peanuts ;P

making Blondies
  1. Prepared and lined with greaseproof paper 8inch by 8inch baking pan. 
  2. Pre heat oven to 180C.
  3. In a large mixing bowl, mix together plain flour, baking powder and salt. 
  4. In another bowl, whisk melted butter, sugar, eggs, vanilla bean paste and peanut butter. 
  5. Add wet mix to dry mix. 
  6. Fold to mix well. 
  7. Scrape batter onto the tray. 
  8. Make it as level as you can. 
  9. Placed strawberry jam in piping bag (easier and less mess), and pipe onto the levelled batter. 
  10. Sprinkle with 2 tablespoon crushed butterscotch peanuts. 
  11. Bake for 25 to 30 minutes or until skewer comes out clean. 
  12. Sprinkle with salt. 
  13. Serve with a cuppa.
Note : 
* the recipe only require 2 tablespoon... It seemed a waste to just make 2 tablespoon .. hence I made more so I could munch on the remaining roasted peanuts ;P
