Pumpkin and Spinach Muffins

Pumpkin...its either you love it or don't!!! Well, my son happened to be the later :(.
I am lucky to be living here where pumpkin is not a seasonal vegetable (or is it fruit???), especially butternut pumpkin.
We can have pumpkin soup, pumpkin rice, pumpkin pies, pumpkin in Asian dishes, pumpkin bread ....oooh the list is endless with pumpkin :), all year round.
and here I am, welcoming October with Pumpkin and Spinach muffins :D

Pumpkin and Spinach Muffins
makes 6 giant muffins
250g plain flour
15g baking powder
2 eggs - lightly beaten
150 ml milk
50 ml olive oil
1 teaspoon black pepper
1 teaspoon salt
30g baby spinach
120g cooked butternut pumpkin (diced)
75g roasted pepitas
- Pre heat oven 190C.
- Sieve plain flour and baking powder twice into a mixing bowl.
- In a food processor, add 60g cooked pumpkin, spinach and 30g pepitas, blitzed for 1 minute (roughly chopped).
- In a jug, mix milk, oil and egg.
- Add milk mixture and the chopped pumpkin mixture into the flour.
- Add the remaining of the pumpkin and pepitas (leave some for toppings).
- Season with salt and black pepper (I added more than 1 teaspoon of black pepper, as I love the peppery taste).
- Mix well
- Divide into 6 (note use the store bought muffins cases).
- Top with remaining pepitas
- Bake for 20-25 minutes until the skewer comes out clean.
I'm a biiiig pumpkin lover too! And yes we have it all year round but I still tend to make autumn based pumpkin recipes only. Somehow makes more sense to me and these look lovely. It's pumpkin soup here today...

Deletedislike pumpkin when i was young, love pumpkin now that i get older :)) LIke you mentioned, love them in buns, cakes, rice, soup..etc...never really have much experience with spinach in baking except for boiling or stirfrying them . These muffins of yours are healthy ones!
