Tim Tam Cherry Tartlettes

Tim Tams.... irresistible and can't just stop at ONE!!! (anyone out there...doesn't like Tim Tams???)
Its rich but it is so... so good :), even better when Tim Tams are on "sale"... less than $2 for a packet of 300g!!!
More than one packets would definitely find their way into my shopping trolley. And once home, I have to stashed these babes in my little storeroom... out of my son's sight... yes that growing up boy could finish them all in a day...only leaving traces and crumbs behind (sometimes...empty packet in the fridge grrrrr !!!!)
My initial plan was to bake Tim Tam with raspberry (from one of the food magazines), however the plan was derailed as I had to use my mascarpone cheese!!!
These tartlettes turned out great.

Lastly I would like to wish my family, friends and readers (who celebrates)...
RAMADAN MUBARAK
330g Tim Tam - crushed
50g butter – melted
300ml thickened cream
250ml mascarpone cheese
2 tablespoon icing sugar
1 teaspoon vanilla essence
1 can of cherries – drained and reserved
the syrup
3 tablespoon icing sugar.
30g almond flakes – pan roasted.
- In a saucepan, mix the reserved cherry syrup with 3 tablespoon icing sugar, simmer over low fire until the syrup thickened. Set aside.
- Whisk cream until soft peak, add icing sugar, vanilla essence and mascarpone cheese.
- Refrigerate until its ready to use.
- Mix crushed Tim Tam with butter and press onto a non-stick tart pan.
- Chill for 20-30 minutes.
- Pipe the cheese mixture onto the chilled casings.
- Top with canned cherries and drizzle with syrup.
- Sprinkle with roasted almond flakes.
Note :
- You might want to add extra sugar for extra sweetness
- Sour cherries will be superb to cut the sweetness and the richness in chocolate :D

Never had a timtam...these tartlets look very beautiful!
ReplyDeleteThose look awesome! I haven't ever tasted tim-tams though, but thanks to a well known searching machine I think I have an idea now how they might taste ;-). I would prefer the second photo - I think the styling is more balanced as well as the lines and the cherries look darker :)
