Chicken basil pesto pasta salad, a fresh satisfying summer salad.
Sorry if I sounded a little braggy, but this is the best pesto pasta salad that I have ever made.

What Goes Well with Pesto Pasta?
This pesto pasta recipe can be eaten on its own without any side dishes.Sprinkle some parmesan, roasted pine nuts and torn fresh basil leaves, that makes a delicious meal on its own.
To make a complete meal and to add more vegetables and protein to the dish, I added roasted cherry tomatoes on truss and pan seared chicken breast.
How To Make Pesto Pasta from Scratch?
To make this pesto pasta takes less than 30 minutes to whip up.The ingredients are listed in the printable Recipe card below together with the descriptions on how to cook the pasta, to roast the cherry tomatoes and to pan sear the chicken.
With a bottle of Homemade Pesto sauce, all is required is to mix the pesto sauce with pasta, sliced chicken and serve with roasted tomatoes.
Do not forget to sprinkle parmesan cheese before serving. This is a MUST step to have a satisfying, delicious plate of pesto pasta.
Most pasta shapes can be used to make pesto pasta but I highly recommend to used either penne, fusilli or Rotelle.
These type of pasta either has grooves to coat with pesto sauce or holes that big enough, so the pesto sauce will be caught in between.
In saying that, if you don't have these pasta shapes, just used what ever pasta packet in your larder.

Chicken Pesto Pasta Recipe

Chicken pesto pasta salad is a comforting and tasty dinner.
A fresh satisfying summer salad bursting with flavour.
Ingredients:
- 500g dried pasta
- A jar of homemade pesto sauce
- 300g cherry tomatoes on truss
- salt and pepper
- 3 pieces of chicken breast
- Pine nuts
- Basil leaves for garnishing

How to cook Chicken Pesto Pasta Recipe
Prepping and Cooking Chicken
- Pat dry chicken
- Drizzle some olive oil
- sprinkle salt and pepper
- Heat up a non stick fry pan
- Place chicken and cook for 8 minutes until charred. See note 1.
- Turn the chicken over.
- repeat.
- Slash the mid portion to check on doneness.
- Add few more minutes if still pink and raw.
- Set aside on a plate, cover with aluminium foil for the chicken to continue cooking
- Slice when its cool.
Roasting Cherry Tomatoes on Truss
- Pre-heat oven to 170C (fan forced)
- Wash, clean and pat dry.
- Using toothpick, prick a small hole into the tomatoes. This is to release pressure building in the tomatoes.
- Drizzle olive oil.
- Season with salt and pepper
- Roast for 20 to 30 minutes
- Set aside for later use.
Pesto Pasta
- Cook pasta as per instruction on the packet.
- Strain the pasta in the colander
- Transfer to heat proof mixing bowl.
- Add homemade pesto sauce
- Mix thoroughly until the pasta are nicely coated with pesto sauce.
- Divide pesto pasta into 4 servings
- Add sliced pan seared chicken and roasted cherry tomatoes.
- Sprinkle some parmesan cheese and pine nuts.
- Serve immediately
Notes:
1. depending on the size, may take longer if bigger chicken breast pieces is used
