Its messy...
but I can guarantee you that you will fall in love almost instantly with this slice of dessert-heaven on earth.

Our summer cake, our favourite summer dessert.

And if I am too lazy to bake almond dacquiose, I opt for my lazy version of using saviordi fingers and assemble my Watermelon and Strawberry Cake in a glass.

Watermelon and Strawberry Cake is a delicious creation of Christopher The's from Black Star Pastry.

I have baked, make and ate many slices of this Watermelon and Strawberry Cake and yet I still crave for more.
I've make for friends' party, and my daughter her's, all slices gone without a trace.

As my niece nicely put it... 'Taste like heaven...'
and my nephew who doesn't like watermelon (first time I heard of someone who doesn't like watermelon!!!) gave a nod, says it all.

And I, adapt with changes this Watermelon and Strawberry Cake recipe from Gourmet Traveller.

There are few very minor changes I made to the original recipe.

  1. Thickened Cream - I doubled the amount of cream. 300 ml is simply not sufficient to have a nice coverage.
  2. Mascarpone cheese - I find that by introducing mascarpone cheese to the cream layer gives the cake a better 'structure' and the cream/cheese layer hold better (no sloppy/ sagging cream layer as in my photo above) 
  3. I used almond meal instead of blending whole almond.
  4. I used egg white powder (meringue powder) instead of fresh egg white.
Note : Item 3 and 4 above is a matter of preference.

Watermelon and Strawberry Cake

Heavenly taste of rosewater cream, delicious strawberry and watermelon cake. Recipe adapted from Black Star pastry in Sydney


Almond Dacquiose
  • 150 g almond meal
  • 150g icing sugar
  • 20g egg white powder (meringue powder)
  • 10 tablespoon  water
  • 135 g caster sugar
Watermelon Cake
  • 1 whole Watermelon (medium size)
  • 40ml rosewater
  • 2 tablespoon caster sugar
  • 40g almond meal
Rose Scented Cream
  • 300 ml thickened cream
  • 250 ml mascarpone cheese
  • 50g caster sugar
  • 4 tablespoon rosewater
Cake topper
  • 500g strawberries - washed and halved
  • 20 ml rosewater
  • 2 tablespoon caster sugar
  • handful of red grapes - wash and halved
  • 1 tablespoon chopped pistachios
  • 1 tablespoon of rose petals


Almond Dacquiose
  1. Pre heat oven to 180C
  2. Line a lamington baking tray (30cm x 20 cm) with greaseproof paper.
  3. Sieve icing sugar and almond meal together. Set aside.
  4. Mix egg white powder and water, whisk until egg white powder dissolves.
  5. Whisk to soft peak
  6. Add caster sugar
  7. Continue to whisk until sugar dissolves and to firm peak.
  8. Add almond meal icing sugar mixture, fold to fully incorporate well.
  9. Pour the mixture onto the pre-prepared lamington baking tray.
  10. Bake for 12-15 minutes (see note 1 below)
  11. Remove from oven and leave it to cool.
Prepare watermelon
  1. Cut watermelon in square shape and in the same thickness as the dacquiose.
  2. Place watermelon slices on cookies cooling rack. 
  3. Sprinkle sugar and spray rosewater
  4. Macerate for 30 minutes
  5. Dab with kitchen paper before placing water melon to form the Strawberry and Watermelon Cake
Rose Scented Cream
  1. Whip cream and sugar to soft peak (see note 2)
  2. Add mascarpone cheese and mix well
  3. Add rose cream
  4. Mix well and place cling film over the bowl.
  5. Refrigerate until needed.
Cake topper
  1. Halved strawberries.
  2. Add sugar
  3. Macerate for 15 minutes
Assemble The Cake
  1. Halved the dacquiose, either longside or shorter side
  2. Use the first half as base, spread about a third of rosecream
  3. Sprinkle almond meal
  4. Place cut watermelon on the cream
  5. sprinkle almond meal again
  6. spread about a third of rosecream again
  7. Place the second half of dacquiose
  8. And spread last third of rose cream
  9. Garnish with strawberries, grapes, chopped pistachio and rose petals (see note 3)
  10. Refrigerate for 2 hours.


1) Keep an eye while baking dacquiose, the bottom will burnt before the top turned golden. I burnt my dacquiose when baked at recommended temperature of 200C.

2) Do not overmix the cream, you may end up with rose scented butter!

3) Brush with gelatine or agar agar on strawberries and grapes, to keep it fresh but....
