Sticky Dates, Banana and Pecan Tea slices

Sticky Date, Banana and Pecan Tea loaf

185g spelt flour
1 teaspoon bicarbonate soda
1 teaspoon salt
90g roasted pecans (roughly chopped)
220g pitted dates (roughly chopped)
150g caster sugar
2 eggs
125ml vegetable oil
3 very large ripe bananas (mashed)
1 1/2 teaspoons of vanilla extract 
  1. Pre heat oven to 180C. 
  2. Butter a loaf pan with butter and dust with flour. 
  3. Sift flour and bicarbonate soda into a mixing bowl. 
  4. Add salt, pecan and dates. 
  5. Mix to thoroughly coat the nuts and dates. 
  6. Use electric mixer, whisk the eggs, sugar and oil until light and creamy. 
  7. Add mashed banana and vanilla extract. 
  8. Add dry ingredients into the banana batter. 
  9. Pour into the loaf pan. 
  10. Bake for 50-60 minutes until skewers comes out clean. 
  11. Cool in the loaf pan for 10 minutes, before turning over onto the cooling rack to cool completely.

  4. What kind of spelt flour did you use? Wholemeal or refined? We have 3 different kinds of spelt flour over is wholegrain, the other two were refined spelt bread and pastry flour.

      I found only Organic White Spelt flour at supermarket :(
