Finally... I baked the classic Lemon Poppy Seed Loaf cake :D

This has been on my list for a very long time.

I procrastinated as I wasn't sure that I CAN take that much dosage of poppy seed, not that I was afraid that I might go loopy but just in case ;P

Lemon icing

This lemon poppy seed loaf cake is unbelievably easy to bake.

I was expecting, like most cake, where you creamed sugar and butter, then add eggs, flour etc!
But, to bake this lemon poppy seed cake is a breeze.

Everything into the mixing bowl, start my Kenwood mixer.
5 minutes later, a smooth, pale and creamy cake batter is done.

Pour batter into loaf pan, into oven and wait....

With the cake in the oven, rising...
The heavenly sweet, lemony aroma that wafting through the kitchen, was killing me slowly!

Lemon icing was as awesome, not to overly sweet. Even though I am a sweet tooth person, but I cannot take anything that is too sweet.

All was good...
Lemon poppy seed loaf cake slices were soft and moist, the icing served its purpose well, to complimented the lemony flavour of the cake and to hide the ugly crater too :D plus .

Only crumbs were left in the cake box by the third day :D.

Easy to bake Lemon Poppy Seed Loaf Cake recipe.

Based on Delicious magazine, with very minor change here and there, this recipe is a keeper.

However do take note of the following:

Note
that baking temperature and time may differ from one oven to the next. Best to always use oven thermometer.

Set baking time 5 minutes less than stipulated time or time indicated on the recipe, check doneness with skewer, then use your own best judgement to increase the time.
The original recipe indicated the baking time is 40 minutes but I needed 50 minutes to bake mine.

Easy Lemon Poppy Seed Loaf Cake

Easy Lemon Poppy Seed Loaf Cake is a classic cake, packed with zesty lemon flavours and poppy seed crunch. Drizzle or drench in lemon icing.

INGREDIENTS:

  • 260g plain flour
  • 40g corn flour
  • 4 teaspoon baking powder
  • 220g caster sugar
  • 185ml warm milk
  • 50 g poppy seeds
  • 185g butter
  • 175g eggs (approximately 3 extra large eggs size)
  • 2g lemon rind
Lemon icing
  • 50ml lemon juice
  • 200g sifted icing sugar

INSTRUCTIONS:

  1. Combine poppy seeds with warm milk and set aside for 15 minutes
  2. Pre-heat oven to 180C
  3. Line baking pan (I use loaf pan), with greaseproof paper.
  4. Place all ingredients above including poppy-milk mixture in a mixing bowl.
  5. Mix until pale and thick.
  6. Pour mixture into loaf pan.
  7. Bake for 50 minutes or until skewer comes off clean.
  8. Cool on wire rack
Lemon Icing
  1. Add lemon juice and icing sugar into a mixing bowl
  2. Using spatula, mix until well mix and thick.
  3. Drizzle over cooled Lemon poppy cake.
  4. Serve.

  2. I tried this recipe today and the cake came out amazing. I used a loaf tin and did a cream cheese icing which was a good combination. The baking time was a bit longer than the suggested time but it's worth always checking irrespective of what a recipe suggests. I also added 2 teaspoons of lemon juice. My family only had compliments.

  3. Hi when you mention warm milk does this mean the milk is at room temperature. Should I use full cream milk or fresh milk.

      I use full cream milk. I zapped the milk (from fridge) in microwave for 30 second.
      The milk needs to be warmed slightly above room temperature but not too hot (boiling point)
