Fresh Grapefruit Cake

A refreshing taste of citrus in every bite of this scrumptious grapefruit cake!
The thing with citrus cake is that I could eat more than I should as it is less rich in comparison to chocolate cake!
My favorite citrus cake of all time is the Lemon Poppyseed Cake.
This year is our grapefruit year, or so it seems :).
Our more than a decade-year-old grapefruit tree gave us lots of fruit and a good harvest!
This delicious fresh grapefruit cake is simple to bake, it is light and uses canola oil instead of butter!
Corn flour
Baking powder
Salt
Caster sugar
Greek yogurt
Eggs
Orange blossom (you can substitute with vanilla essence)
Vegetable oil or canola oil
I used a bundt mold for this recipe.
Grease the inside of the bundt mold with butter and evenly sprinkle flour.
This step is necessary if you are using a bundt mold, to prevent the grapefruit cake from sticking to the mold.
Another option is to use a loaf baking pan.
This is much easier to prepare, in comparison to the bundt mold above.
Just line the loaf pan with greaseproof paper.
Sieve plain flour, corn flour, and baking powder.
Add eggs and Greek yogurt into a mixing bowl
Add sugar infused with grapefruit zest.
Mix using a hand mixer or kitchen benchtop mixer.
Note: Use the appliances above to achieve the 'creamy and thick' stage.
I did hand mix but it was a failure!
This grapefruit cake uses oil instead of butter.
Mix until well combined
Add flour mixture
Mix well.
Grapefruit cake batter is ready.
Gently pour the cake batter into the bundt mold.
Remove the cake from the oven and leave the cake in the bundt mold for a maximum of 10 minutes.
Then unmould onto the cooling rack.
Pour the syrup all over the cake.
Leave the cake to completely cool down before drizzling the icing.
My advice is if you are living in hot weather countries then best to consume within 5 days.
Take the cake out at least 2 hours before serving.
