Creamy sun dried tomato sauce with chicken and pasta

"Marry me" chicken is a one-pan dinner, an easy meal of delicious creamy chicken with sundried tomatoes!
This easy recipe has become one of the most popular recipes.
'Marry me' chicken is a simple, easy, and quick dish of creamy sun dried tomato chicken pasta (or spaghetti) for an easy weeknight meal.
It took minimal effort to make and it is my family favorite at the moment.
I would say this creamy chicken recipe is a simple version of a creamy Tuscan chicken pasta recipe.
Few really simple steps to sun-dried tomato chicken pasta recipe.
Thin chicken breasts are perfect for pan-searing.
Season chicken meat with salt and pepper.
Chopped the tomatoes.
Heavy cream can be used for this recipe.
a) Heat a large skillet on medium heat.
Add a little bit of olive oil.
Cook chicken breasts until brown.
Cover the chicken meat to let the meat rest and the remaining heat will continue cooking the juicy chicken breasts.
b)Cook the pasta/ spaghetti until al dente!
As this meal takes at least 15 minutes to cook, best to start cooking the pasta of your choice.
Remember to reserve at least 1 cup of pasta water for the creamy sauce.
Do not clean or wipe the brown bits left on the skillet.
These brown bits make the sauce taste even better!
c) Add sun dried tomato oil (this taste better than olive oil at this stage)
d) Add chopped garlic.
Cook for a couple of minutes.
e) Add chopped sun dried tomatoes.
f) Add pasta water.
I only use half a cup for light cream.
I may use a full cup if I were to use heavy cream.
g) Add light cream
h) Season with salt and pepper
i) Bring the creamy sun-dried tomato sauce to a simmer
j) Add tender juicy chicken breasts.
I sliced the cooked chicken for easy to eat and chew.
k) Garnish with chopped parsley
l) Serve immediately with cooked pasta of choice.
Add fresh spinach at the last stage just before you turn off the heat.
Give it a good stir.
Love the idea of crusty bread mopping up the tasty cream sauce.
Remove the container from the fridge the next day and heat up in the microwave oven.
