I am sure you must have heard of this chicken dish that has been making its rounds on the net, mostly popular on TikTok!
This easy recipe has become one of the most popular recipes.

'Marry me' chicken is a simple, easy, and quick dish of creamy sun dried tomato chicken pasta (or spaghetti) for an easy weeknight meal.
It took minimal effort to make and it is my family favorite at the moment.

I would say this creamy chicken recipe is a simple version of a creamy Tuscan chicken pasta recipe.

Few really simple steps to sun-dried tomato chicken pasta recipe.

1. Chicken meat.

The best chicken meat for this recipe is to use chicken breasts.
Thin chicken breasts are perfect for pan-searing.
Season chicken meat with salt and pepper.

2. Oil-packed sun-dried tomatoes.

I used the store-bought oil-packed sun-dried tomatoes.
Chopped the tomatoes.

3. Garlic

4. Cream.

I used light cream for this recipe.
Heavy cream can be used for this recipe.

5. Pasta

I used spaghetti for this recipe, however, you can use the pasta of your choice: rigatoni pasta or penne pasta.

Step by step cook creamy chicken pasta.

Heat a large skillet on medium heat
a) Heat a large skillet on medium heat.
Add a little bit of olive oil.

Cook chicken breasts until brown.

Cover the chicken meat to let the meat rest and the remaining heat will continue cooking the juicy chicken breasts.

b)Cook the pasta/ spaghetti until al dente!
As this meal takes at least 15 minutes to cook, best to start cooking the pasta of your choice.
Remember to reserve at least 1 cup of pasta water for the creamy sauce.

Using the same large skillet that we used to cook the chicken meat.

Do not clean or wipe the brown bits left on the skillet.
These brown bits make the sauce taste even better!

c) Add sun dried tomato oil (this taste better than olive oil at this stage)

Cook for a couple of minutes.

I only use half a cup for light cream.
I may use a full cup if I were to use heavy cream.

g) Add light cream

h) Season with salt and pepper

I sliced the cooked chicken for easy to eat and chew.

I recommend using chicken breasts as chicken thighs are much suitable for curries or stews.

Yes, you definitely can add fresh spinach to this dish.
Add fresh spinach at the last stage just before you turn off the heat.
Give it a good stir.

3) Can I add parmesan cheese?

Adding parmesan cheese will make this recipe creamier and may end up tasting like "olive garden" pasta recipes!
