Easy Homemade Red Curry Paste recipe.
Making Thai red curry paste at home with fresh chillies, galangal, lemongrass and other spices.
It is so satisfying to be able to make your own Thai curry paste.
I can play about with chilli heat and spices that goes along with Thai curry paste making.
Have you tried making Thai green curry paste yet?
Not long now till summer, when green chillies are abundant then I am able to make green curry paste again.

The star ingredient in Thai red curry paste is dried chillies and red of course!!
Using dried red chillies will definitely intensify the colour and may intensify the heat as well.
But I am a recalcitrant when it comes to following recipes!
I used fresh red chillies to make Thai red curry paste, instead of dried chillies, hence you see a weaker red in my red curry paste.
There are 4 types of Thai curry paste, that I know of:
- Thai green curry paste
- Thai red curry paste
- Thai yellow curry paste
- Thai Mussaman curry paste
Yield: 1 cup (250ml)

Making Thai red curry paste at home with fresh chillies, galangal, lemongrass and other spices.
INGREDIENTS:
- 6 fresh red chillies (110g)
- 4 cloves of garlic
- 1 red onion
- 1 slice galangal (6g)
- 2 lemongrass stalks (2 tablespoon)
- 1 kaffir lime leaf
- 10g chopped fresh coriander roots
- 10 black peppercorns
- 2 teaspoon dried shrimp granules (belacan)
- 1 tablespoon coriander seeds
- 1 teaspoon cumin seeds
INSTRUCTIONS:
- Pan roast coriander seeds then cumin seeds for 2 minutes or until fragrant (careful not to let it burnt). Set aside to cool. Then grind into fine powder.
- In a food processor, add all ingredients including ground coriander and cumin.
- Add 3 tablespoon of canola oil, add more if required for the food processor to process to a smooth paste.
- Makes about 250 ml red curry paste.

Hello. 110g of chillies seems a lot. Are they the small hot ones or a larger variety? There are so many different sorts out there and I don't want to blow anyone away with too much heat. Thank you. Patrick.

I used big long 6 chillies which is about 110g in weight.
My advise is to know your local chillies, if the chilli is too hot then most apt to reduce the amount.
