Comes this weekend, my kitchen will be in the state of super chaos, busy and lots of mess!!! ... and we are only cooking for 4!!! I cannot imagine cooking for many!!!
This year will be the year of Monkey...
so peeps... let's tune up our celebration mood with some spice and peanuts.
Spiced Peanut Butter Cookies, to welcome "The Monkey".
Spiced Peanut Butter Cookies
Ingredients

115g / 4 oz butter at room temperature
125g / 4 1/2 oz raw sugar
1 egg (60g size)
2 drops vanilla bean paste / 5ml vanilla essence
225g / 8oz cinnamon peanut butter *
115g / 4 oz plain flour
1/2 teaspoon bicarbonate soda
a pinch of salt
- Cream butter and sugar until pale**.
- Add egg and vanilla into the butter mixture.
- Stir in peanut butter and whisk till mix well.
- Sift in flour, salt and bicarbonate soda to form a soft dough.
- Refrigerate for 30 minutes.
- Pre heat oven to 180C.
- Line baking tray with greaseproof paper.
- Place the dough in piping bag and piped out the dough.
- Using fork, press down the dough onto baking tray.
- Bake for 12 minutes.
- Cool on wire rack before keeping in air tight container.
makes about 80-100 small cookies (20 cents size - Aussie coins that is ;P)
Note :
* alternative ~ use smooth peanut butter mix with 2 teaspoon cinnamon powder (more cinnamon if you like the taste)
** butter and sugar will not cream well... there’ll be bits of raw sugar which gives the cookies the ‘crunch’ with every bite.
