Cheat Coconut Chutney

It was received by all especially my son.
In my last post, my attempt to make tosei/ dhosa failed miserably, if not for potato masala (click on the small photo on the right to take you to the post ;P ) and coconut chutney, most likely we would ended up eating instant noodles or sandwiches ;P
Just in case you are wondering why cheat... :D
There were few items that I didn't have either in my pantry or fridge... like green chilli, red chilli, asafoetida and... I used up all my urud dhall :(
but be assured.... lack of few ingredients doesn't mean that taste was compromise...
I swear ... :)

- Heat oil in shallow pan.
- Add mustard seeds, stir until they started to crackle and pop.
- Add cumin seeds.
- Fry until fragrant not burnt.
- Add dried chillies, curry leaves and pounded ginger.
- Stir for few minutes add coconut and water.
- Cook and stir occasionally for 5 minutes or until desiccated coconut becomes hydrated.
- Season with salt.
