Beef Patty with Asian Pear/ Sanjeok is a Korean beef patties mix with mashed Asian pear. Cooked over open fire to give that smokey flavours. A perfect inclusion to your Barbeque spread.

Its 'Mission Impossible' of the food kind.
My girl is trying her best to get us hooked with her obsession of everything Korean!!!! From Korean drama to Korean food to variety show.
Drama? its passable!!! I could sit down with her watching the drama from start to the end but I put a pause to the next drama... same plot everytime, I need not elaborate more.
Anyway... she managed to get us hooked on Korean variety show called 'Running Man'.
Even though not understanding the language to get most of what being said.. especially jokes! we got the gist of the whole plot with the help of subtitle albeit few seconds delay :)
One of the challenges in one of the episodes aired was the challenge to cook Korean traditional cuisine. Without doubt...when food is mentioned I am all ears and eyes.
As the show progresses... a voice could be heard "that looks yum.. MOM!!! can you please make some..."
.... and here it is...
Sanjeok (stand to be corrected...and apologies to all Korean foodie out there, if I got it wrong...) is basically, mince beef mix with the local produced pear from Naju, made into patties.
The meat then cooked over charcoal. The meat is sweet, tender with smokey aroma.

Beef Patty with Asian pear/ Sanjeok
Serve 6-8
1 kg mince beef
200g red onion
250-300g nashi pears
4 1/2 Tablespoon soy sauce
3 1/2 tablespoon sugar
20g ginger - grated
20g garlic
4 teaspoon sesame oil
3 teaspoon sesame seeds
1 teaspoon ground black pepper
Sauce
150g nashi pear
1 tablespoon soy sauce
1 teaspoon sesame seeds (pan roasted)
1 1/2 teaspoon sugar
3/4 teaspoon salt
1/2 cup water
1/2 teaspoon flour
2 teaspoon mirin
1/2 teaspoon sesame oil
Making beef patties
- Chop onion and pear (separately and use chopper not blender or food processor).
- In a medium size mixing bowl, add mince beef, nashi pear, chopped onion, soy sauce, sugar, ginger, garlic, black pepper, sesame oil and seeds.
- Set aside for at least 2 hours.
- Start the charcoal barbecue going.
- Shape the patties into your desired shape.
- Cook the patties over hot charcoal.
Making Sauce
- Chopped pear and add to a saucepan.
- Add soy sauce, sugar, water, mirin and bring to boil for 1 minute, then lower heat to a simmer for 10 minutes.
- Mix flour with 1 tablespoon of water and add into the simmering sauce to thicken.
- Turn off the heat.
- Add sesame oil and seeds.
Enjoy the smokey Sanjeok with either salad or as burger.
Scrumptious! That is such an original and delicious combination.

ReplyDeleteMy husband's favourite meal! I make beef/pork patties (they are called frikadellen over here) very often for his lunch. I am going to try your recipe next time as I love the add of pears in these. Looks absolutely mouthwatering, Lisa.
