When life gives you Kimchee... what would you do?...
.... make everything using kimchee....from Kimchee Fried Rice to Kimchee pancake, to eating as condiment accompanying lunch or dinner or take a bowl of Kimchee and have it on its own...

Kimchee Pancake
1 cup flour
1 egg - lightly beaten
1 to 1 1/2 cup of water
1 1/2 cup of chopped kimchee
salt to taste
- Mix all the ingredients to a pancake like batter (if its too thick add water, little at a time).
- Heat frying pan or skillet.
- Spray with cooking oil.
- Scoop about 3 tablespoon of batter onto hot pan.
- Cook as you would cook pancake.
- Serve immediately.
Kimchi pancakes..... wow, looks special. And it is so simple to make for a quick spicy snack.

yum! today is a kimchi's day Lisa, I made gyoza with kimchi too! your kimchi pancake is really creative, would like to try it if possible :)
