Prawn Curry with Green Mango

can't wait .... Mango season will soon be here.... hurray!
First time, ever!!! I am able to resist eating all the MANGOes!!!
Been wanting to cook this Prawn Curry with green mango for a long time .... at least 4 years, since H jotted down the recipe on a piece of scrap paper, while on holiday.
Me being me.... a 'hantu pelam' / numero uno mango eater, if only you could hear ... a big loud argument happening... :(
"eat? curry?"... "eat? curry?"... "eat? curry?"
... voices in my head!!!
Most of the time team "eat" will win...
... but this time round, feeling determined, to let the voices on team"curry" win... I set aside 2 mangoes :P... somehow few slices of sourish young mango managed to find their way into my tummy :O
Prawn Curry with Green Mango
serve 4-6

1 teaspoon hot chilli powder
1 tablespoon paprika
1/2 teaspoon ground turmeric
20g garlic cloves - crushed
10g finely grated ginger
10 coriander seeds - grind
5 g cumin - grind
1 tablespoon palm sugar
2 green mango -sliced lengthwise into 8 slices per mango
400ml coconut milk
2 teaspoon salt (or season to taste)
1 tablespoon tamarind paste
1 cup of water
1 kg prawns -deveined
curry leaves
Garnish
Chopped coriander
julienne young mango
salad
chopped tomato, cubed cucumber and mint

- Add spices : chilli powder, paprika, ground tumeric, grinder coriander seeds, cumin seeds, grated ginger and garlic into a medium size saucepan.
- Add water.
- Stir.
- Bring the mixture to boil then lower heat to a simmer.
- Simmer for 10 minutes.
- Add curry leaves, salt, tamarind paste, sugar and coconut milk and simmer.
- Add prawns and mango slices and cook until prawns turn pink (approximately 12-14 minutes) and are cooked.
- Garnish with chopped coriander and julienne mango.
- Serve with steamed rice and salad

I have never had a green mango..your prawn curry look really super, Lisa.
ReplyDeleteEventhough I can't tasted it but looking at that loads of spices to cook this dish....I'm sure it is fabulously delicious.
