Spelt Flour Banana Bread

Banana bread with super soft crumb, moist and everyone's favourite banana bread!

Is it banana bread or banana cake?
What makes it a 'banana cake' and not banana bread? and vice versa!
These two questions are baffling.
Anyhow, be it banana bread or banana cake, both taste just as awesome :)
Visual works better for me, hence I include step by step photos on how to bake a good banana bread (using spelt flour)
Since the quantity used is not much, this 2 steps method will saved you money than buying the store bought buttermilk.
Buttermilk is very simple to make.
All you need is milk and lemon juice or vinegar.
Add these two together and let it infuse for at least 10 minutes.


Sift wholemeal spelt flour (or plain flour) with corn flour and baking soda (not baking powder)

Sift the flour mixture, twice.

Total weight of banana is 350g.
Weight is much easier to use rather than how many bananas, as size of bananas vary!

Add salt.
This is an optional step.

Cream butter at room temperature and caster sugar until pale and creamy.

Add egg one at a time once the pale creamy butter sugar mixture has been achieved.
Add vanilla essence as well.

Next step is to add mashed bananas.

And buttermilk.
Mix well.

Last step is to add flour in 3 batches.
Mix well in between batches.

Pour banana bread batter in a loaf pan lined with greaseproof paper.

Smooth the surface.

Bake for 30 minutes at 180C then lower temperature to 160C for another 20-25 minutes until skewer comes off clean.

Let the banana bread cool down in the pan for 10 minutes before slicing them.

Enjoy your banana bread with a cup of tea or coffee.
However, we may have some leftover, keep banana bread in an air tight container.

1) How to make buttermilk?

Easy banana bread recipe with spelt flour and buttermilk is quick to prepare.
Ingredients
- 250g wholemeal Spelt flour
- 35g corn flour
- 1 teaspoon bicarbonate soda
- 1/2 teaspoon salt
- 200g caster sugar
- 2 eggs
- 110g butter
- 4 ripe bananas (350g) - mashed
- 1 teaspoon vanilla extract
Buttermilk
- 75ml milk
- 1 1/2 teaspoon lemon juice (or vinegar)

How to make buttermilk
- Add lemon juice to milk
- Set aside for at least 10 minutes
How to bake banana bread
- Pre heat oven to 180 C.
- Grease loaf pan with butter.
- Sift flours and bicarbonate soda twice.
- Cream butter and sugar until creamy and pale.
- Add eggs one at a time into creamed butter-sugar mixture.
- Add in the mashed banana, vanilla extract and buttermilk.
- Mix well (using mixer).
- Add flours 1/3 at a time and mix well.
- Add last 1/3 flour and hand mix until well combined.
- Pour batter into the loaf pan
- Bake on 180C for 30 minutes then lower the heat to 160C for 20-25 minutes
- Check for doneness when skewer comes out clean

Nothing like a banana cake in the morning, I love the addition of spelt. I love mine with walnuts too!
