These two questions are baffling.
Anyhow, be it banana bread or banana cake, both taste just as awesome :)

Visual works better for me, hence I include step by step photos on how to bake a good banana bread (using spelt flour)

1) How to make buttermilk?

The very first thing that you need to do before starting to cream sugar and butter, is to make buttermilk.

Since the quantity used is not much, this 2 steps method will saved you money than buying the store bought buttermilk.

Buttermilk is very simple to make.
All you need is milk and lemon juice or vinegar.

Add these two together and let it infuse for at least 10 minutes.

2) Steps to bake a good banana bread!

a)Dry ingredients

Sift wholemeal spelt flour (or plain flour) with corn flour and baking soda (not baking powder)

Sift the flour mixture, twice.
Sift the flour mixture, twice.

b) Mashed bananas

Mashed bananas
Total weight of banana is 350g.
Weight is much easier to use rather than how many bananas, as size of bananas vary!

Add salt
Add salt.
This is an optional step.

c) Sugar, butter and eggs

Butter and sugar
Cream butter at room temperature and caster sugar until pale and creamy.

Add eggs
Add egg one at a time once the pale creamy butter sugar mixture has been achieved.
Add vanilla essence as well.

d) Banana bread batter

Next step is to add mashed bananas.

And buttermilk.
Mix well.

Last step is to add flour in 3 batches.
Mix well in between batches.

e) Baking banana bread

Pour banana bread batter .
Pour banana bread batter in a loaf pan lined with greaseproof paper.

Bake for 30 minutes at 180C then lower temperature to 160C for another 20-25 minutes until skewer comes off clean.

Let the banana bread cool down in the pan for 10 minutes before slicing them.

Enjoy your banana bread with a cup of tea or coffee.

How to keep Banana bread?

Banana bread is best eaten on the day.
However, we may have some leftover, keep banana bread in an air tight container.

Ingredients

  • 250g wholemeal Spelt flour
  • 35g corn flour
  • 1 teaspoon bicarbonate soda
  • 1/2 teaspoon salt
  • 200g caster sugar
  • 2 eggs
  • 110g butter
  • 4 ripe bananas (350g) - mashed
  • 1 teaspoon vanilla extract
Buttermilk
  • 75ml milk
  • 1 1/2 teaspoon lemon juice (or vinegar)

Instructions

How to make buttermilk
  1. Add lemon juice to milk
  2. Set aside for at least 10 minutes
How to bake banana bread
  1. Pre heat oven to 180 C.
  2. Grease loaf pan with butter.
  3. Sift flours and bicarbonate soda twice.
  4. Cream butter and sugar until creamy and pale.
  5. Add eggs one at a time into creamed butter-sugar mixture.
  6. Add in the mashed banana, vanilla extract and buttermilk.
  7. Mix well (using mixer).
  8. Add flours 1/3 at a time and mix well.
  9. Add last 1/3 flour and hand mix until well combined.
  10. Pour batter into the loaf pan
  11. Bake on 180C for 30 minutes then lower the heat to 160C for 20-25 minutes
  12. Check for doneness when skewer comes out clean

I am keeping this post short and sweet...

I am in the midst of sifting through lots of receipts, stacks of paperwork that requires my immediate attention, papers that will eventually .... magically become $$$$ ....

Its TAX season, I need to lodge our taxes and get refunds as soon as possible :D
