Sticky Rice Mango

Known as Khao Niaow Ma Muang is a delicious Thai dessert made of sticky rice (glutinous rice), sweet coconut milk and delicious mangoes.

This sticky rice mango recipe only need few ingredients, and it is so easy to make at home.

This is a must try mango dessert!!!

How to make sticky rice with mango

A quick run through...

I prefer to soak sticky rice overnight, but 4 hours is suffice.

Then proceed with steaming the sticky rice.
Again my preference is to add coconut milk to the hot steamed sticky rice. 
This is to ensure that the rice is moist and has that creamy taste.

Some recipes are done without adding to sticky rice.
I find that by using this method, the sticky rice grain tend to be a little bit 'al dente' to my liking.
But then again the preference is yours!!

How to serve Sticky Rice Mango

Once the sticky rice has cooled down, scoop and serve in a bowl (or glass).
Add slices of mangoes and drizzled some coconut milk.

Fancy this sticky rice mango up a notch with some crushed pistachios.

How do I keep this sticky rice mango leftover?

Keep sticky rice, coconut milk and mangoes separately in the refrigerator.

Microwave the sticky rice according to the manufacturer's manual.

Cold refrigerated sticky rice tend to be hard the next day. 
Even taking it out and leave it on the kitchen top will not make the sticky rice soft.
You need to either microwave or steam it again.

The one thing I am looking forward to Ozzie summer ... is the Mangoes.
This is my numero UNO top of the list fruit... then followed by cherries :D

Every year... when mangoes are in season, I made some plans... I wanted to try making this and that, enthusiastically looking for recipes that has mango in it... but in the end, it was a just a "bru-ha-ha" all talk and no action >:(
... there are voices (real voices) could be heard muttering in every mango that I peeled, sliced and popped into my mouth!!! "Yeah mom, thats what you said every year.... ;p"

A-ha!!!
This year... I became less mango consumed, perhaps I had fill up my quota on mango-bingeing! (Its Mangoes bumper crop {insert BIG SMILE here}). To date I 'think' I have bought about 5 boxes of mangoes (60 mangoes), my husband begged to differ... he said I have consumed about 6 or 7 boxes already...
but then... I am not counting hehehe ;)

It was my third post, back in Feb 2009... where we had a 'competition' for the best dressed mango glutinous rice dessert. Click on the photo will take you back to my 'Point and Shoot' days.

And this post reminds me of my 'mother-daughter' trip to Bangkok 2 years ago.
We had fun (I know my daughter did).
I had a scare - my leg swelled up like a balloon and were sore from walking. The unsuitable pair of 'thongs' aka flip-flop was making it worst :(

We visited every Shopping malls... we loved the weather in Bangkok.
I enjoyed bargaining whilst my daughter was trying to act as if she didn't know me  at all... hehehe

That was a memorable trip for both of us. Hope we can do it again... this time will drag the father and son along ;P, right? 'wink-wink'

Lets hope that we will have another good year ahead.
May the MIGHTY ONE shower us with HIS blessings, give us good health and keep us safe from harm.

  3. Oh yum! I've never had rice and mangos before, but it sounds amazing. Your mango slices are so perfect and pretty. Mine always come out half smashed and sad, but maybe that means I need to eat more mangos to practice...

  6. I love tropical fruits and like you, mango is at the top of my list for Summer fruits. Aren't they super delicious? I bet they taste even better with this glutinous rice. YUM!
