Easy Zucchini Tart, perfect with side salad

What is the difference between pie and tart?

A question I often asked myself.

Pie

Often serve in the dish that it is baked in, like apple pie.
Pie has sloping side with crust on all around and its covered too.

Tart

Pastry or crumb base covering the bottom and sides.
Usually not covered.

How To Make Zucchini tart?

List of ingredients to make zucchini | courgette tart is in the recipe card below.

1. First and foremost, prepare short crust pastry.
You might want to this before hand as pastry needs to be chilled in the refrigerator.

2. Roll pastry onto a tart/ flan baking dish.
The short crust pastry recipe below is for rectangular loose base baking pan (photo below)

3. Prepare the filling of egg- flour mixture
Then add chives, feta and pepper

 Pour into the pre-baked tart pan.
Arrange the thinly sliced zucchini, halved cherry tomatoes.

Do you bake the tart shell before filling?


Yes I do.

Pre-bake tart shell is better to avoid soggy bottom.

No one like soggy bottom tart, right?  :D

How do you serve the tart?


The best time to serve this zucchini tart is straight from the oven.

In summer, I would serve my zucchini tart with summer salad.

However in winter, or cooler weather, I most prefer to serve my zucchini tart with warm roast vegetables or roast tomatoes.

Can I use Store Bought short Crust Pastry Instead?


Yes.
You can definitely use the store bought short crust pastry instead of making short crust pastry from scratch.

Store bought short crust pastry will not be as crumbly as homemade short crust pastry.

Can I freeze my left over Zucchini Tart?

Not advisable to freeze.

However, any left over zucchini tart can be refrigerate and consume within 2 days.

Word of advice, DO NOT LEAVE any leftover in the pantry overnight, especially in summer.
It will quickly turn bad!!!

I am stoked as this is one of the most 'pretty' Zucchini, Feta and Chives pie, I have baked :D

Zucchini or Courgette?
Which of the two sounds "yummm.." to you?

Zucchini/ Courgette belongs to the spesies cucurbita pepo.
... and I always known it as Courgette and I prefer courgette .... it sounds so romantic ....so French (well ... it is a French word!!) French loan word commonly used in the UK ;P


Zucchini is tasteless!
I don't mind Zucchini, as long as it is steamed or cooked... but NOT eating it RAW!!! too sappy for my liking :(


My teens... however, aren't too keen on having zucchini, steamed or otherwise!!
I found Belinda Jeffrey's mini cookbook in a secondhand bookshop, for $2...browsed and had the itch to try her Zucchini, Feta and Dill pie. 
I tried her recipe of grating zucchini (Belinda's recipe ). Excellent!! with zucchini hidden within the egg-flour mixture. They won't know and I won't tell ;P

All done...baked, cooled and served... 

Surprisingly... not a word from both!!! No complaints!!!
...must have loved the pie as both were asking for second helping :D.

Second time round, I introduced the sliced zucchini version...
Guess what???  it went down well with both teens, this recipe is a keeper :D
