Hot and Sour Soup



This week has gone by very quickly.
It flew by even quicker when I have one child down with a cough and cold. Its always this time of the year :(
...and the worrying part is---- she is having her EXAMS, starting this week, starting TODAY!!!! English is her first paper.
Perhaps stress is another contributing factor  :(  ... my poor girl

Hot and sour soup is one of our favourite soups, the other is Chicken and Sweetcorn Soup
Perhaps I should cook for her this soup again to combat winter chill :)
What is your comfort food in winter or when you are in need of some TLC?
I am in need of some TLC... I am down with a sniffle too :(

Hot and Sour Soup


Hot and Sour Soup

Serve 4

3 cups of water
200g chicken breast
1 carrot - diced
20g chinese mushrooms soaked and thinly sliced
250g soft beancurd  - diced
20g black fungus – cut into bite size
20g white fungus – cut into bite size
100g frozen peas
150g shredded bamboo shoots (store-bought from Asian grocer)
2 eggs (well beaten)
1 chicken stock cube
20g young ginger – julienne
4 tablespoon soy
4 tablespoon apple cider vinegar
2 teaspoon sesame oil
1 teaspoon ground white pepper
1 teaspoon ground Sichuan pepper
2 tablespoon corn flour (mix with 2 tablespoon of water)
½ cup chopped spring onion
salt to taste
  1. Bring water to boil. 
  2. Poached chicken breast until just cook. 
  3. Using slotted spoon, dish out chicken breast and set aside. 
  4. Bring the pot of water to boil again. 
  5. Add fungus, chinese mushroom, vegetables and stir well. 
  6. Reduce heat and simmer until vegetables is just cook. 
  7. Add white pepper, Sichuan pepper, salt, and apple cider vinegar. Adjust taste to your liking. 
  8. Drizzle egg over the simmering pot of soup without stirring for 2 minutes.
  9. Stir the cornflour mixture and gently stir until the soup thickens. 
  10. Simmer for another minute. 
  11. Remove from heat and drizzle a dash of sesame oil. 
  12. Garnish with spring onions 
  13. Serve immediately.

  4. I usually do a quick-fix hot and sour with mushrooms, tofu, carrots and sometimes finely shredded cabbage. Then add that splash of vinegar...ooh..yum yum yum. Your hot and sour soup looks very appetizing, and from some "perspective", looks like the expensive "sharks fin" soup. Who needs inhumane, un-environmental friendly sharks fin soup when we all can have your hot and sour soup.
