Bircher Muesli
Summer holidays has just ended for E, she's a little sad, school means no more late nights, no more lying lazily in bed until lunch, no more hanging out with friends!

This is her last year in high school. 

Is she ~
Nervous? Yes.

Is her mom ~
Nervous? Yes.

Anxious? Oh yes... she is VERY anxious.
Stress?? more than her daughter!!!

'Stay calm... Keep cool... 10 months will be gone in a flash'

is not a morning person, and if she does wakes up early (on a very... very rare occassion), she just couldn't stomach breakfast at all.

Its too early for breakfast' or 'I've just brushed my teeth!' , are her excuses, unless I make something slightly different, like this Bircher Muesli and packed it nicely in jars.

Then she will gladly packed in her bag and its Breakfast-on-the Go for her. No fuss.

Bircher Muesli

1 cup oats
1 cup fruit juice (I use whatever I have in my larder)
1 tablespoon linseed
1/4 cup dried cranberries
1/2 to 1 cup milk (depending on preferred consistency)
1-2 tablespoon breakfast greek yoghurt
Fruits (optional)
toasted almonds (optional)
honey (optional)
  1. Mix oats with fruit juice. 
  2. Add dried cranberries and linseed. 
  3. Refrigerate overnight. 
  4. Add milk to preferred consistency. 
  5. Stir and mix well. 
  6. Top up with cut up fruits. 
  7. Top up with breakfast yoghurt. 
  8. Add toasted almonds and drizzle with honey.
  9. Serve cold

  7. Yes that photo does look a tad green, was that intentional? I am sorry to admit that I am just like your daughter! Never really a breakfast person have always struggled with eating in the morning after waking up. 1) I always oversleep until it's time to go. 2) I never feel hungry after waking up. Mum tells me to change my habit all the time but I've tried many times! Hopefully I can change one day =)
