I thought of giving some life to this old 2009 guacamole post of mine, since avocados are selling at a song price at the moment in the grocery stores.

What is Guacamole?

Guacamole is a mashed avocado based spread or dip to serve with either corn chips or tacos.

Guacamole, originally from Mexico but one of the much loved side dish all around the world.

Ingredients to make Guacamole.

Authentic guacamole would only have 5 ingredients (not counting salt).
Lime, cilantro (fresh coriander), jalapeno, onion and of course avocado.

But there are some guacamole recipe that add some filler like tomatoes (which I did) and garlic.

Traditionally, guacamole was made by mashing avocados in pestle and mortar and add all other ingredients later.

How to Make Guacamole?

How to store guacamole?

Store freshly made guac in the fridge.
Transfer the freshly made guacamole into a clean bowl.

Use cling film over the bowl.

How to avoid the browning or oxidation process in the guacamole?

I usually placed the saved avocado seeds back into the guacamole, it does the trick for at least a couple of hours prior to serving.

When kept overnight in the fridge, the top layer of guacamole change to brown, which means oxidation has taken place!!!
My bad :(

How to overcome the problem?

One of the solution is cover the cling film over guacamole, so the guacamole top surface does not comes in contact with air.

Or you may adopt the same hack when I made my pesto sauce.
Level up the guacamole surface, then drizzle some oil to cover the surface, so that air will not come into contact with guacamole.

Pour out the oil layer when you are ready to serve guacamole.
